The Downtown Development Authority (DDA) presents Fort Collins Foodie Walk™, a food lover's paradise of its series of signature business promotions.

This monthly self-guided walking tour from 5 – 8 pm on the third Friday of each month and celebrates the culinary culture and thriving food and beverage retail scene in Downtown Fort Collins. Join Downtown’s finest culinary shops each month to sample seasonal flavors and exciting taste experiences! 

Who is a foodie? Foodies are people who simply love food for consumption, study, preparation, and recreation. Foodies wish to learn everything about food, the best and the ordinary, and take in the science, industry, history, and characters surrounding food.

Culinary shops in Downtown Fort Collins focus on unique quality ingredients, locally sourced, and organic produce in their shops. Foodie Walk offers a way for people to explore and enjoy the flavorful world of food and drink!

Sampling Smoked Tamale Bites

Downtown Ace Hardware is excited to make Smoked Tamale Bites for November Foodie Walk.

Smoked Tamale Bites Ingredients:

  • 12 frozen tamales 
  • Your choice of sauces: green chili, red enchilada sauce, cilantro-lime crema, chipotle sour creamEquipment
  • Serrated knife
  • Cutting board
  • Smoker (Traeger)
  • Foil
  • Smoker-safe tray or pan

Instructions:

Remove tamales from the freezer and let sit at room temperature for 20–30 minutes, until ice cold, but sliceable. Keeping the husks ON, cut each tamale into thirds using a serrated knife. Arrange pieces standing upright on a smoker-safe tray, cut side up. Preheat smoker to 275–300°F.5. Cover the tray with foil and smoke for 15 minutes to steam.Uncover and smoke an additional 5–10 minutes to add flavor and set the texture. Serve warm with sauces on the side or drizzled lightly over the top.

Notes: Keeping the husk on during cutting helps the tamale hold its shape. Works excellent for bite-size event service; stable and easy to pick up.

This month, we are sampling Spicy Stuffing with Merfs Hand Grenade and Flavor and Fire Taco Lobo!

Merfs Hand Grenade: A deeply fiery, richly umami, palate-pleasing sriracha. It’s pineapple sweetened, instead of sugar, which lends a slightly sweet citrus finish.
