Course 1: Choice of Chicken Tortilla Soup, White Bean Chicken Chili, Fat Tire Beer Cheese Soup, Hill Country Salad, Baby Bleu Mixed Salad OR Caesar Salad.

Course 2: Choice of Snake River Farms Wagyu Beef Sirloin: port reduction, blue cheese fondue, baked potato OR Truffle Braised Short Ribs: boneless beef short ribs, mustard greens, roasted garlic mashed potatoes, natural jus OR Scottish Salmon: crab, shrimp, and brie stuffing, champagne butter, brown rice quinoa pilaf.

Course 1: Choice of Blue Agave House Salad, Caesar Salad, Pumpkin Bisque Soup OR Chipotle Broccoli Cheddar Soup.

Course 2: Choice of Blue Corn Enchiladas, Tequila Lime Chicken OR 9-ounce Steak Rojo.

Margarita: Choice of Blue Agave Margarita (Rocks or Frozen), Sangria Swirl, Muy Macho Margarita OR Spicy Cucumber Margarita.

Course 1: Choice of Surf N’ Turf: a sirloin steak and coconut shrimp with garlic mashed potatoes and sautéed veggies served with a pineapple dipping sauce and red wine demi-glace OR New York Strip Steak: served with garlic mashed potatoes and sautéed veggies, finished with gorgonzola butter and onions rings OR Fish N’ Chips: Atlantic Cod dipped in our ale batter and breaded with crispy bread crumbs, served with pub chips OR Schweineschnitzel: Pork tenderloin pounded thin, breaded and deep-fried over garlic mashed potatoes and bacon beer sauerkraut OR Highland Cottage Pie: Colorado lamb marinated in our Horsetooth Stout and fresh herbs combined with celery, carrots and onion layered in a flaky crust with potatoes, lamb gravy and parmesan cheese.
